A Manon is a Leonidas Belgian praline built around a fresh buttercream filling, a praliné base and a whole roasted hazelnut, enclosed in a chocolate shell. The original — and best-known — version uses a white chocolate shell, but today the Manon family also includes milk, dark, ruby and blond chocolate variations.
A short history of the Manon
The Manon was not always made with white chocolate. The original 1980s version was a nougatine-based filling topped with a walnut and finished with a layer of crystallised sugar.
The recipe was reimagined by Jean Kestekides, a member of the founding Leonidas family, who replaced the sugar coating with white chocolate. At the time, this was a genuine first: no other chocolatier was wrapping a praliné in a white chocolate shell. He also swapped the walnut for a hazelnut (which roasts beautifully and keeps longer) and replaced the nougatine with the rich buttercream filling that defines the Manon today.
That single recipe change turned a regional curiosity into the chocolate that now sits at the heart of the Leonidas range.
What a Manon tastes like
A classic Manon Blanc is built around three textures and three flavours layered into one bite:

Why Manons are different from other Belgian pralines

- Serve at room temperature. Take them out of the fridge 10–15 minutes before eating so the buttercream softens.
- Pair with coffee or champagne. The coffee Manons are especially good with an espresso. The Manon Blanc works beautifully with a glass of brut champagne.
- Eat within 3–4 weeks. Because of the fresh buttercream, Manons don't keep as long as harder pralines. This is a feature, not a bug.
Don't freeze them. Freezing damages the texture of both the chocolate shell and the buttercream.
